Ingredients:
Bitter gourd - 3
Salt - 1 tbs
For Temper:
Mustard seeds - 1/2 tbs
Urad dal - 1/2 tbs
Oil - 2 tbs
For Masala:
Channa dal - 2 tbs
Coriander seeds - 1/2 tbs
Cumin - 1/2 tbs
Sesame seeds - 1/2 tbs
Urad dal - 1/2 tbs
Mustard seeds - 1/2 tbs
Coconut powder - 2 Tbs
Red chilly - 1
Method :
- Chop the bitter gourd finely
- Mix it with salt and let it sit for sometime or until you are ready with masala.
- Fry channa dal for 1 minute and then add all the other masala ingredients except coconut powder.
- Fry until the nice aroma comes out of it, couple of minutes.
- Grind with coconut powder - Do Not Add water.
- Keep the masala powder aside.

Press the chopped bitter gourd to remove excess water, adding salt removes the bitterness to some extent. But it removes little nutrition also. So if you say okay to bitter then u can skip this step.
- Add oil in a pan, add mustard seeds and urad dal. Once it starts to splatter add the chopped gourd and fry on a medium flame. Fry until all the moisture is absorbed, about 15 minutes.
- Now add the ground masala powder and fry for 2-3 minutes more. And is ready to Serve.
- Enjoy it with rice.
