Sweet Potato rice



Sweet Potato has many nutritional facts. This is high source of dietary fiber, low in cholesterol, sodium and saturated fats. It is  a very good source of vitamin A and C. I try to use it often in our diet. Sometime bake them or I make curry or rice item like this.

Ingredients: Serving 2-3 adults
Basmati Rice  - 2 cups
Sweet potato - chopped in to cubes ~1 cup
Peas - 1 cup
Carrot - 1/2 cup chopped
Green beans - chopped in to 1 inch lengthwise
Onion - 1 cup chopped
Garlic - 2 cloves, chopped finely
Ginger - 1 inch cube grated
Any other vegetable of your choice like potato, Cauliflower,  zucchini
1/2 cup of Split Moong Dal or yellow lentil
Bay leaves - 1
Clove - 2
Cashew,raisins,pistachio  - handful
nutmeg
cumin powder - 2 tbs
coriander powder - 1tbs
Salt - 1 tbs or per taste
chilly powder or Garam Masala
Water
Oil or Ghee- 2 tbs  (I reccomand ghee, it gives nice aroma and taste). Homemade ghee recipe is here

Soak rice for half an hour, mean time chop the vegetables and and get ready!

Heat the Pressure cooker on a medium high flame, add ghee and wait for few seconds. Add cloves,bay leaves,nutmeg and then add onion, garlic and ginger and saute in until translucent. Add the rest of the vegetables and fry for some time. Add lentil and soaked rice, mix it well. Add the cashews, raisins and pistachio, salt mix well. Add 21/2 cup of water and mix well close the lid. wait for 3 whistles and turn off the heat. Serve hot.
