Hearty Barley, quinoa soup

Barley is one of our regular diet food. Sometime I use barley replacing rice, sometime make soup with that or make barley dosa and Idli. I ground the barley and make barley cereal for Arushi, she is 6 months now and she likes it.

Ingredient for Barley soup :

Barley - 1 cup
Quinoa - 1/2 cup

Garlic -  2-3 cloves, chopped finely
Ginger - 1/2 inch piece grated
Vegetables -
Celery - 1/2 cup chopped
Zucchini or squash - 1/4 cup chopped
Onion - 1/2 cup finely chopped
Frozen mixed vegetables - 1/2 cup
Tomato - 1/2 cup chopped
Bell pepper - 1/4 cup chopped
Cumin powder - 1tbs
Salt - 1tbs or per taste
Pepper - 1tbs or per taste
Water or Vegetable broth - prefer broth

Cook barley in water or broth for 10 minutes, stirring occasionally. Remember barley takes much time to cook. Add quinoa to that and stir well, let it cook for another 7-8 minutes.  meanwhile heat oil in a pan and add onion, garlic and ginger, saute it until translucent. Add all the vegetables and saute it for a minute. Add these mixture to the boiling barley, quinoa mixture and mix it well. bring it to boil. Add salt, pepper, cumin powder. Cook the soup on a low heat for 20 minutes. Ready to serve. Enjoy the soup with bread tossed with cheese.
