Sabudana payasa / Shabakki payasa / Tapioca pudding


I had prepared this pudding last Sunday for my guests. I made this earlier never turned out right but this time it came out so good, Melting in the mouth. Try this and let me know how much have you enjoyed.

Ingredients: Serves 4 people
Sabudana /tapioca - 1 cup
Sugar - 1 cup
Milk - 21/2 cups ( add more if it becomes thick)
Water - 2 cups
Cardamom - Freshly ground 1 tbs
Cashews/ Chopped Almonds/ Raisins - handful (Optional but recommended)


Heat the ghee on a medium-high flame. Fry sabudana for few minutes around 5 minutes or until all sabudana turns white individual balls. Frying well is critical. Do not let it turn brown. You have to continuously stir while frying. Add this fried sabudana to a big pan and add water. Cook on a medium flame stirring regularly for every 1-2 minutes. If you forget to stir , it gets stuck to the bottom!. Cook for 20 minutes or so. All the white sabudana balls become color less and it looks soft  balls and double in size.
Then add milk and sugar, cook for another 20 minutes. Add Cardamom and other dry fruits. cook for some more time stirring regularly. You can have warm pudding or keep it in the refrigerator and have cold. Both tastes yummy!. Enjoy
