Malai Kofta


Ingredients:  Serving size 4 Adults

Paneer - ~2 cups grated
Potato - 2 medium size - boiled - pealed - mashed
Carrot - 1 - grated
Peas - 1/2 cup
Flax seed - 2tbs (optional, but tastes good and more healthy)
Tomato - 1 small can pureed or 2 boiled and pureed.
Ginger - 1/2 inch cube
Garlic - 2 cloves
Onion - 1/2 cup finely chooped
heavy cream - 1 cup

Garam masala - 1 tbs
Bay leaves - 1 or 2
Cumin powder - 1 tbs
Coriander powder - 1 tbs
Kastoori Methi - 1 tbs (optional, but recommended)
Salt - per taste
Bread crumbs - 1/2 cup

Cook carrot and peas with very little water for 2-3 minutes, add grated paneer, mashed potato, salt and little garam masala. mix well to make a dough. Make small round ball and keep it aside. Roll all the dough in the bread crumbs.
Heat 5-6 tbs of oil in a pan, place each ball in the oil and turn the heat to medium. Let it cook for 3 minutes, Do not try to turn else it breaks. After 3 minutes, turn the ball to other side and cook for 3 more minutes.
Alternative: You can deep fry the ball it tastes wonderful. If you are fan of fried food you can do this. OR
Coat ball with oil and bake it at 350f for 10-12 minutes or until it turns golden color. This is the most healthier version, Weight watchers can do this way.

Gravy: Heat 1 tbs of oil in a pan, add bay leaves, cloves, onion, garlic and ginger, fry until translucent. Caramelized onion gives the best taste. Add pinch of salt and sugar and fry on a low heat until translucent to make a caramelized onion. add pureed tomato and cook for 2 minutes. Add garam masala, salt, chilly powder, coriander and cumin powder. Add the  heavy cream or half and half ,  mix well. Check for salt and spice consistency, add more if necessary. Now add the prepared ball called kofta, garnish it with cilantro. This can be served with naan, roti , bread or rice. Enjoy
