Vangi bath/ Eggplant rice

Warm vangi bath

This is one of my all time favorite dish. We had a guest at home last Sunday and had prepared vangi bath for them and they loved it. It tastes yummy, trust me.

Ingredients you need for Vangi bath Masala :

Channa Dal : 3 tbs
Urad Dal      : 3 tbs
Coriander Seeds : 1 tbs
Cumin Seeds : 1 tbs
Methi Seeds(fenugreek seeds) - 4
Cloves  - 3-4
Cardamom : 1 -2
1 small piece of Cinnamon stick (may be 1/2 inch)
Dry coconut Powder - 4 tbs
Oil - 1 tbs
hing or asafetida - a pinch

Fry all of them except coconut powder until brown and you get nice aroma. Add coconut powder and fry for 1 minute. Grind them to make a powder. Easy right?
Store this in a air tight container for future use.

For Eggplant rice preparation:

Eggplant - chopped into 1 inch piece
Oil - 6-7 tbs (hmm, it is more but tastes amazing)
Mustard seeds - 1 tbs
Urad dal -1 tbs
Turmeric - 1/4 tbs
lemon juice - 1 tbs
Basmati rice - 2 cups
Vangi bath masala powder - 2 tbs
Salt

Soak the rice in water for half an hour. And cook the rice in rice cooker or pressure coocker. For 2 cups of basmati rice, you might want to add 3 cups of water for nice individual rice grain.
Heat the oil in a pan, add urad dal, mustard seeds, turmeric and hing Once it starts to splatter add the eggplants and fry for sometime. It has to cook in oil itself for better taste. You will know that is cooked when it's color changes and it becomes mushy mushy. Add vangi bath masala and mix well.  Add the cooked rice,lemon juice and salt. Mix well but gently to enjoy the wonderful vangi bath. You  can eat this with yogurt/curd or cucumber raita.
