Mutter Mastani: Sweet Peas Barfi or Halwa

One of my friend 'Mala Keshav' submitted this recipe to 'Sweet Peas' event. Very unique and delicious recipe.

Here is the recipe:


Ingredients :

Raw or frozen green peas  1 cup
Sugar 1 cup
Khowa or condensed milk - ~1 cup

Ghee or Clarified Butter  - 4 Tbs
Dry fruits of your choice
Elaichi or Cardamom powder


Method of preparation :

1. Cook green peas in a vessel till soft. While cooking add a spoon of sugar (to make it's colour remain green)
2. Strain the water n add cooked green peas in blender and make a fine paste
3. In a pan put ghee,  add some dry fruits of your choice, and then add the blended paste, stir till water evaporates.
4. When it's half way done add khowa or condensed milk, 2-3 spoons of ghee, sugar and keep stirring until it forms like a ball
5. In a plate smear ghee and put the green ball and pat to spread it evenly. Cut it in to desired shapes.

6. Serve at room temperature.
7. Enjoy.

Halbai: Rice and Coconut burfi/Halwa And aloo/Potato and Sweet peas tikki chat



Roopa had prepared this coconut halwa (Halbai) recipe on Sunday's get together. It was so tasty, I think, I must have had at least 3-4 pieces that night!. :) Thanks roopa for these delicious recipes, It was so yummy. 


Ingredients for Halbai :

Rice - 1/2 cup
Coconut powder - 1 cup
Jagary or Sugar - 1 cup
Ghee or Clarified Butter - 3/4 cup
Fresh Cardamom powder - 1/4 tbs


Method:

1. Soak rice for 3-4 hrs
2. Grind the saoked rice along with coconut powder and jaggery or sugar to a smooth paste, little bit thinner than dosa batter.
3. In a pan add 1 tbsp of ghee & pour the batter and keep stirring in medium flame. ( make sure there is no lump formation )
4. Keep stirring till it thickens and add the cardamom powder.
5. Add 1/2 cup of ghee little by little and continue to mix well. Takes around 15-20mins.
6. Just like halwa, it gets non sticky and ghee tends to separate. At this time pour into a greased plate and allow it to cool for 5mins and cut into desired shape.
7. Enjoy!


Ingredients for Aloo and Sweet Peas Tikki :

This recipe is an entry to sweet peas delicious recipe event.  Here is what you need


Boiled Potato - 2 big, peeled and mashed gently
Frozen peas - 1 cup
bread crumbs - 1 cup
oil- 2 tbs and  more for shallow frying
Cumin Seeds - 1 tbs
Turmeric powder - a pinch
Ginger - 1/2 inch piece, grated.
Green chillies - 1-2, finely chopped
Garam Masala - 1/2 tbs
Lemon Juice - 1/2 lemon squeezed
Chilly powder - 1/2 tbs optional


Easy Method:

Heat oil in a pan and  add cumin seeds, pinch of turmeric powder, finely chopped ginger, finely chopped green chilies, peas and allow it to cook for 4-5mins. Later add 1/2tsp chilly powder as per your taste,  garam masala, salt to taste and cook for another 5mins. Allow it to cool and mix with aloo n 1/2 cup of bread crumbs adding half a slice of lemon juice. This makes a tikki dough.


Take small piece of dough and make a round ball. Press between the palms to make cutlet. Make it into shape either round or oval and then roll it on remaining bread crumbs and shallow fry on both sides till it turns brown in color and crispy enough. Serve hot with Ketchup. Enjoy.

Carrot Halwa : Microwave version

Wow, It was so tasty!. My friend Kokila had prepared this Carrot halwa for last Sunday's get together. And roopa's Halbai and Mangalore Bajji was also very tasty, Oh! My mouth is watering! :) . I had asked them for these recipe and here they are. Thanks dear for this yummy recipe.
You got to try this today and do let us know how it turned it out.

Here you go:


Ingredients for Carrot Halwa:

Carrots - 1 pound
Sugar - 1 cup
Ghee or Clarified butter - 4-5 tbsp
Condensed Milk - 5 Tbs
Cashews, almonds and raisins  - handful.

Easy Steps:

1. Peel the carrots and microwave the whole carrots for 7-8 mins. Alternatively we can steam them for 5 mins.
    (Microwaving or steaming the carrots softens them and makes it easy for grating).
2. Grate the carrots.
3. Microwave the grated carrots for about 6 mins.
4. Next add 4 spoons of ghee. Mix well and microwave for another 5-6 mins.
5. Add 4 -5 tbsp of condensed milk (I use fat free) and microwave for 5 more mins.
6. Add dry fruits and sugar and microwave for another 5 mins.

Sweet coconut spring roll : Dosa or Crepes spring roll : Jenu Kolu (Honey sticks)

Coconut spring roll also called Honey sticks is a delicious recipe from my mom, very easy and super tasty. Authentic  Havyaka Community recipe. Make a thin dosa(Crepe) stuff the stuffing's, deep fry and dip in a syrup! . I just love it. Try it yourself!

Ingredients:
Filling:
Dry Coconut Powder - 1 cups
Jaggary - 1/2 cups
Cardamom powder - 1 tbs
 Wrapper: (You can use the store bought french crepes for quick and easy rolls)
Raw rice - 1 cup
Methi seeds - 1 tbs
Salt - 1 tbs or to taste

Syrup:
Jaggary or brown sugar - 1/2 cup
Honey - 1 Tbs
Water - 2 Tbs


Method :
  1. Soak rice and methi seeds for 5-6 hours. Grind to make very thin batter.
  2. Let it rest for fermentation.
  3. Prepare the filling :  Add all the fillings ingredients together and bring it boil while mixing continuously. Once the mixture is bit thickened turn off the heat.
  4. Prepare the Syrup : Boil syrup ingredients together on a low-medium heat, until the jaggary becomes gluey and slightly thick. Keep it aside
  5. Heat a pancake pan or tava on a medium-high flame.
  6. Pour a serving spoon full of batter in the center and spread it around to make a very thin paper like dosa. You can use thick photo matt paper cut into small rectangle. ( I use my un-used debit card! :) ) . It makes very thin pancake.
  7. In  minute or two pancake or crepe will be ready.
  8. Repeat the process for rest of the batter.
  9. Divide the each crepe or dosa in to 2 piece.
  10. Fill the desired amount of filling's in to the divided crepe and roll to make a spring roll.
  11. Make all the spring rolls, mean time heat oil in a pan.
  12. Deep fry until brown.
  13. Place the fried spring roll in the paper towel to absorb the excessive oil.
  14. Drop them in the syrup bowl for 5 minutes.
  15. Ready to serve!.
  16. Enjoy.
Note:
  1. You can use only sugar to make spring roll filling's and syrup.
  2. This stays good for weeks in the refrigerator.
  3. If you like, you can serve this with ghee or clarified butter.
  4. Instead of making Rice crepe you can use the store bought french crepes

Ragi Manni : Millet burfi / Millet Halwa

Ingredients:

Millet flour - 2 cups
Sugar or Jaggary or Brown sugar - 1 cup
Coconut powder - 2 Tbs (Optional)
Freshly ground cardamom powder - 1 Tbs
Water - 5 cups

Method:
  1. Slowly add the water to the flour while stirring continuously to make a smooth batter.
  2. Strain it through a clean muslin cloth or with the colander having a very small holes to remove the dirt.
  3. Add some more water to the millet and strain it again.
  4. After extracting a millet liquid, add sugar or jagary and bring it to boil on a medium flame.
  5. Keep stirring, until the millet liquid becomes thick. 
  6. You can test the done-ness by placing a spoon of millet mixture in to the plate, if that is very sticky and does not spread around, that means it is done.
  7. Add the cardamom powder and any dry fruits and cashews if you prefer.
  8. stir well, You will have a kept stirring it until done, other wise it gets stuck to the bottom and all your efforts goes waste.
  9. Grease a plate with ghee or butter
  10. Spread the tick millet mixture  on the plate and spread it evenly.
  11. Let it rest for minimum half an hour before serving.
  12. With the help of knife, cut the halwa into square or any of shape of your choice.
  13. You can keep this in the refrigerator and serve chilled.
  14. If you cover this and store it in the refrigerator, it stays good for weeks.
  15. Enjoy.

Eggless Applesauce, Chocolate cake



Yesterday we had a blast at roopa's house, played cards, Carrom. Even Arushi also had a wonderful time with Vidhu and Murari. It was Chats and Dinner party. Thank guys for organizing. This chocolate cake was one my entry for desert along with DahiVada. Everyone had prepared unique and delicious foods,  we ate so much!. Must do some workouts today without fail!.

Recipe:
Here is what you need:

All purpose flour - 2-1/2 cups
Applesauce  otherwise pureed apple - 2 cups
Sugar - 3/4 cup
Salt - 1/4 tbst
Baking powder - 1 tbs
Baking soda - 1/2 tbs
Ground cinnamon and cloves - 1 tbs
Ground flaxseed - 2Tbs
Raisins - 1 cup

Milk - 3/4 cup
Vanilla extract - 1 tbs ( You can prepare vanilla extract at home like this )
Apple cidar vinegar - 1tbs
Chocolate syrup - 1 cup
Chocolate chip - 3/4 cup
Water - 4Tbs
Butter or shortening - 1 stick melted or 1 cup at room temperature

Method:
  • Preheat the oven to 400F .
  • Mix all dry ingredients in a bowl and sift gently.
  • Mix all wet ingredients together and add this to dry ingredients. 
  • Add the butter and mix well with spatula, until mixed well.
  • Lightly brush or spray the baking dish with oil or butter.
  • Pour the mixture into baking dish.
  • Bake it for 30-35 minutes depending on the oven type.
  • Check for doneness; toothpick or knife inserted near the center comes out clean.
  • Serve cold.
  • Enjoy

Apple pie

Ingredients:

For the Crust:
2 cups of all purpose flour
1 cup of melted butter
5 tbs of cold water
1 tbs of salt

For the Filling:
Apples - 3 big apples: thinly sliced
Sugar - 11/2 cups
Lemon juice - 1 tbs
Salt - 1/4 tbs
Cinnamon powder - 1 tbs
all purpose flour - 2Tbs
Butter stick - 1 tbs



Method:
  • Preheat the oven to 420F.
  • Knead all the crust ingredients together in hand or food processor for few seconds. Do not knead the dough for long time.
  • Divide the dough in to two balls.
  • On the floured flat surface, roll the ball in to a circle shape slightly larger than the pie pan or dish.
  • Slowly transfer the flattened dough into pie dish, fit into a pan, pressing against all the sides.
  • Cut off the overhanging edges.
  • Prepare the fillings.
  • Mix all the filling ingredients in  a large bowl and mix it once.
  • Roll out the other ball just like the first one.
  • Place the fillings in to pie shell, spreading evenly with the back of the spatula.
  • Cut the butter stick into small pieces and spread on top of the fillings.
  • Carefully place the other rolled ball over the fillings.
  • Press the edges down into the base pie shell. Covering the entire fillings.
  • Brush the outer layer with the butter.
  • Make couple of ventilation holes.
  • Transfer the pie pan to preheated oven; to lower rack.
  • Bake it for around 45-50 minutes. Depending on the oven type and condition. It took me 50 minutes.
  • Enjoy the delicious pie.

Sushi rice(Japanese rice) and coconut milk pudding


I liked Sushi rice (Japanese rice), because of it's small, cute texture and  it retains the shape even after cooking. For yesterday's Apple picking and potluck I prepared this pudding and it turned it delicious.


I prepare this Pudding or payasa in two different ways, both ways, payasa turns out great, give it a try.

Method 1:

Ingredients:
Japanese rice or any other rice of your choice. - 1/2 cup
Coconut milk - 1 cup
Cow Milk pr Soy milk - 11/2 cup
Water - 1 cup or as needed
Sugar - 1/2 cup
Honey - 2-3 Tbs
Fresh ground cardamom - 1 tbs
Raisins - 2 Tbs

Steps:
  • Rinse the rice and cook with water. Check for water consistency, if it becomes too thick, you may want to add little water but do not overdo.
  • Once the rice are cooked, add coconut milk and milk.
  • Bring it to boil, stirring every now and then. Be careful, it will get stuck to the bottom.
  • Add sugar and honey.
  • Add ground cardamom and mix well.
  • On a medium heat keep stirring for 10 minutes.
  • Turn off the heat.
  • Serve warm or chilled.
  • Enjoy
Method 2 : Simple Akki Payasa (My mom's version)

Ingredients:

Rice - 1/2 cup
Milk - 2 cups
Water -1 cup
Jagari or brown sugar or Sugar - 3/4 cup

Steps are same as the Method 1, only you will not be adding coconut milk and honey but both tastes yummy.  Enjoy.

Ingredients:
Sweet pumpkin/ Halakumbalakayi - 1 long
Sugar - 11/2 cup

Sweet Potato Payasa/Pudding : Genasina gadde payasa


On the ocassion of VaraMahalakshmi pooja, I prepared Sweet Potato paayasa with Banana muluka and sweet and khara pongal.
Ingredients: Serves for 4 adult (Depending on their temptation though)

Sweet Potato - 3 big; Cut into 1 inch cubes
Sugar/Brown sugar - ~1 cup
Sooji Rava - 3 Tbs
Cardamom - 1tbs powdered
Cashews/Raisins - handful
Milk - 11/2 cup
Water - 1 cup
ghee - 1 tbs
Salt - a pinch or less then 1/8 tbs

Sabudana payasa / Shabakki payasa / Tapioca pudding


I had prepared this pudding last Sunday for my guests. I made this earlier never turned out right but this time it came out so good, Melting in the mouth. Try this and let me know how much have you enjoyed.

Ingredients: Serves 4 people
Sabudana /tapioca - 1 cup
Sugar - 1 cup
Milk - 21/2 cups ( add more if it becomes thick)
Water - 2 cups
Cardamom - Freshly ground 1 tbs
Cashews/ Chopped Almonds/ Raisins - handful (Optional but recommended)

Sull kadubu (sulgadubu)

I don't eat much of oily foods, so i used to tell my mom; make some food using less or no oil for me. She used preapre sulgadubu for me. Now my husband won't eat oily stuffs. so i make this one for him. He likes it very much. Ingredients:

Idli rava - 1 cup
Jaggary - 1 cup
coconut powder - 1/2 cup
brown sugar - 2 tbs
cardumum powder- 1 tbs
oil
> Soak the rava for 10 minutes in the water. (We can use raw rice also in place of rava, if we use rice, soak it for half an hour to one hour. Way of doing is similar to the other alternative). grind the rava. It should be little thicker than the dosa batter. Add the jaggary to the batter and mix it well. Put the batter in to the thick base container and bring it for cooking. cook in the medium flame stove until it becomes thick. Keep mixing it through out, see to it that it is not sticking to the base. Add the cardumum powder for the best taste.
>Mix the coconut powder and brown sugar in the vessel. And make small balls with it.
>Apply little oil on to the plantain leaf or aluminium foil.
>Make a round ball from the cooked rava-jaggary mix and roll it on the leaf/foil. see to it that it will not become thin. Now put the coconut ball inside and fold it around the ball. keep it aside. Similarly make from the remaining mix.kadubu is ready!
> We can eat like this also with the ghee and coconut chutney or
>Pressure cook all the kadubus for 5 min. Searve with ghee or chutney. Print Friendly and PDF ◦

Kadle Maddi

I love kadle maddi since i was child. Every time i go to home, my mom prepares some of my favorite dishes, kadle maddi one of them.
Ingredients:
~channa daal - 1 cup
~toor daal - 2 tbs
~brown sugar/Jaggary - 1 -1.5 cup
~Ghee - 2 tbs
~coconut powder -1/4 cup
~sesame - 1 tbs
~cardomom powder - for taste
~cashew/ almonds/raisins -handfull.
Method:
> cook both the daals in the pressure cooker. cook until it becomes soft (dont mash it)
> Once the daal is cooked properly, pour sugar or jaggary to it and boil it again until all the water evaporates.
> After it became thick, make the flame low and keep mixing it (See to it that, it will not stick to the base)
> Add coconut powder and sesame to the mixture and mix it well.
> Add the cardomom powder and the dry fruits to the daal sugar mixture,
> Add the ghee and mix it well.
> serve hot.
Tip: If you it with ghee, it tastes amazing.
