Quinoa Soup

Ingradients: Serving size 4

Quinoa - 1/2 cup

Garlic - 2-3 cloves chopped

Onion - 1 cup chopped

Celery - 1 stick chopped nicely

lemon juice - 1 tbs

Green beens - 1/4 cup chopped

Carrot - 1/4 cup chopped nicely

Green peas - 1/2 cup

Cheddar Cheese - 1/2 cup devided

Cumin Powder - 1/2 tbs

Black Pepper - 1/2 tbs or per your taste

Salt - 3/4 tbs or per your taste

Olive oil - 1 tbs

French bread - sliced into 1 inch thick



I highly recommand , you get atleast 1 package to try it out.



Before cooking, the seeds must be rinsed to remove their bitter resin-like coating, which is called saponin. Quinoa is rinsed before it is packaged and sold, but it is best to rinse again at home before use to remove any of the powdery residue that may remain on the seeds. The presence of saponin is obvious by the production of a soapy looking "suds" when the seeds are swished in water. Placing quinoa in a strainer and rinsing thoroughly with water easily washes the saponin from the seeds. In South America the saponin which is removed from the quinoa is used as detergent for washing clothes and as an antiseptic to promote healing of skin injuries

I just love telling facts about Quinoa. Anyways, we will continue with our recipe.



Cook the seed as per cooking instruction in the package. If you don't have the package handy, here is what you have to do.


1/2 cup of seed needs 11/2 cup of water or broth, for soup you can add more water or broth.turn on the stove to medium to high. keep stirring every now and then to avoid sticking to pan. once you see the small rings ( there will be not any rings for the uncooked seed, you will be surpised to see the rings, if you cooking for the first time!. I did!). add all the other ingradients except cheese and let it boil for sometime. do not over cook the vegetables. the crunchy taste of Quinoa and vegetables will be so good. Ah, my mouth is watering.



At the end add some cheese and lemon juice. serve hot with french bread topped with cheese broiled for 1 minute. You can saute the onions and garlic to give little different taste. I know you are creative, this is just an idea. you play around with it. Have fun.

You can give a twost to this soup by adding little or more vegetables and/or heavy cream ( do not add lemon juice if you are adding cream). If you are a fan of Paneer ( a soft cheese, a cottage cheese) like i am, you can add the cubes or grated Paneer . It tastes so amazing. Since paneer also has most nutritional facts especially high in protien. It will like a big dinner. Soup and bread will be stomach filling.
